摘要
广府饮食文化包含了广府饮食的物质文化和精神文化,是一种内外兼备的文化体系。文章简要阐述了传统广府烹饪工艺背后潜藏的饮食文化,从选料、配料、小炒、清蒸以及面点5个方面剖析传统广府烹调工艺在现代社会饮食中的特色应用,并就烹饪工艺的创新提出思路。
Cantonese food culture contains the material culture and spiritual culture of Cantonese food.it is a cultural system that combines both inside and outside.The article briefly describes the food culture hidden behind the traditional Cantonese cooking craftsmanship,analyzes the characteristic application of traditional Cantonese cooking craftsmanship in modern social diets from 5 aspects of material selection,ingredients,stir frying,steaming and pastry,and put forward the idea of the innovation of cooking technology.
