摘要
为研究绿茶茶渣-壳聚糖复合涂膜的最佳配方,以新鲜鸡蛋为试验对象,通过定期测定失重率、哈夫单位、蛋黄指数和蛋清pH来探究茶渣-壳聚糖复合涂膜在常温下对鸡蛋的保鲜作用。结果表明,以4 g茶渣与1.5%的壳聚糖复合涂抹保鲜效果最好,所研制的复合膜具有绿色、天然、优质等特点。
In order to study the best formulation of green tea dreg-chitosan composite coating,the preservation effect of tea dreg-chitosan composite coating on fresh eggs at room temperature was investigated by regularly measuring the weight loss rate,Haugh unit,yolk index and pH of egg white.The results showed that 4 g tea dregs and 1.5%chitosan had the best preservation effect,and the composite film was green,natural and high quality.
