关于二次碱炼工艺对大豆油耐煎炸性影响的研究

摘要 目的:研究植物油脂二次碱炼工艺对油品耐煎炸品质的影响。方法:对二次碱炼工艺及常规碱炼碱炼工艺生产的大豆油进行留样检测及煎炸实验,比对两种工艺油品质量指标与耐煎炸性差异。结果:二次碱炼油品与常规碱炼油品质量指标无明显差异,煎炸后二次碱炼油品的酸价、AOM值、极性组分指标明显优于常规碱炼工艺油品。结论:二次碱炼工艺对大豆油煎炸稳定性有明显改善。 Objective:To study the effect of the secondary alkali refining process of vegetable oils on the frying resistance quality of oils.Method:The soybean oil produced by the secondary alkali refining process and the conventional alkali refining process was tested and fried,and the oil quality index and the difference in frying resistance of the two process oils were compared.Results:There was no significant difference in the quality indicators of secondary alkali refining products and conventional alkali refining products.After frying,the acid value,AOM value and polar component indicators of the secondary alkali refining products were significantly better than those of conventional alkali refining process oils.Conclusion:The secondary alkali refining process can significantly improve the stability of soybean frying.
