摘要
在经济社会高度发展的今天,食品烹饪工艺不断趋于多样化,丰富着人们的日常生活。烹饪过程中,食品经过一系列复杂的物理、化学反应,其中营养物质会发生巨大变化,甚至可能产生一些有害物质,不同烹饪工艺对食品品质的影响研究备受学术界关注。本文首先论述了前期处理对食品品质的影响,继而重点分析了不同烹饪工艺对食品品质的影响,最后对如何做到健康饮食提出了一些建议。
In today's highly developed economy and society,food cooking technology is becoming diversified constantly,enriching people's daily life.In the process of cooking,the food undergoes a series of complex physical and chemical reactions,among which the nutrients have undergone tremendous changes,and even some harmful substances have been produced.The research on the influence of different cooking techniques on food quality has attracted much academic attention.This article first discusses the impact of pre-treatment on food quality,then focuses on the analysis of the impact of different cooking techniques on food quality,and finally puts forward some suggestions on how to eat healthy.
