澳洲白羊、杜泊绵羊与本地寒杂羊杂交羊肉质比较

摘要 为研究澳洲白羊、杜泊绵羊与本地寒杂羊杂交F1代羊肉的品质,该试验选择澳洲白羊、杜泊绵羊与本地寒杂羊杂交F1代各10只,公母各半,进行屠宰试验,检测肉质中的常规养分和氨基酸含量情况,试验结果:澳本杂交羊肉中的粗蛋白、水分显著高于杜本杂交肉羊;澳本杂交羊的鲜味氨基酸显著高于杜本杂交羊,说明澳本杂羊的肉质在营养含量和鲜味上优于杜本杂交羊。 In order to study the meat quality of Australian white sheep,dorper sheep and local crossbred F1 sheep,10 Australian white sheep,10 dorper sheep and local crossbred F1 sheep,10 male and 10 female,were slaughtered,the results showed that the crude protein and water content in the meat of Aoben crossbred sheep were significantly higher than that of Duben crossbred sheep,and the umami amino acid content of Aoben crossbred sheep was significantly higher than that of Duben crossbred sheep,the results showed that the meat quality of Aoben crossbred sheep was better than that of Duben crossbred sheep in nutrition content and fresh taste.
