摘要
为研究德清地区在售的莫干黄芽中重金属污染情况,本文采用电感耦合等离子体质谱仪(ICP-MS)分析茶叶在不同的浸泡条件下茶汤中的砷(As)、镉(Cd)、铬(Cr)、镍(Ni)、铅(Pb)、铜(Cu)、锰(Mn)和锌(Zn)8种重金属的溶出规律。结果表明,试验选取的11种市场在售的莫干黄芽中,重金属含量处于安全水平,各种重金属在茶汤中的浸出率随浸泡的次数增多而减小,随浸泡温度升高浸出率增大,随浸泡时间的延长浸出率增大。其中,Cd、Cr、Pb、Cu、Mn 5种金属元素的浸出率相对较低,而As、Ni和Zn 3种金属元素的浸出率相对较高。
In order to study the heavy metal pollution in the Mogan yellow bud tea sold in Deqing area,the dissolution rules of As,Cd,Cr,Ni,Pb,Cu,Mn and Zn in tea soup under different soaking conditions were analyzed by inductively coupled plasma mass spectrometry(ICP-MS).The results showed that the heavy metal contents in 11 Mogan yellow bud teas on sale in the market were at a safe level.The leaching rates of heavy metals in tea soup decreased with the increase of soaking times,increased with the increase of soaking temperature,and increased with the extension of soaking time.The leaching rates of Cd,Cr,Pb,Cu and Mn are relatively low,while the leaching rates of As,Ni and Zn are relatively high.
