摘要
农副产品是农产食品生产过程中产生的次级产品,这些副产品含有高功能或生物活性的附加值化合物。近年,随着消费者对健康食品的需求日益增加,具有潜在功能成分及价格低的农副产品成为了天然食品添加剂的研究对象,有研究表明副产品和它们的提取物可以作为添加剂成功地融入食物中。本文对农副产品进行分析,发现可被用作多功能食品添加剂,具有防腐、抗氧化剂、食品着色剂起泡剂和乳化剂的特性。
Agricultural and sideline products are secondary products produced in the process of agricultural food production.These by-products contain high functional or bioactive value-added compounds.In recent years,with the increasing demand of consumers for healthy food,agricultural and sideline products with potential functional components and low price have become the research object of natural food additives.Some studies have shown that by-products and their extracts can be successfully integrated into food as additives.The analysis of agricultural and sideline products shows that they can be used as multifunctional food additives with the characteristics of anti-corrosion,antioxidant,food colorant,foaming agent and emulsifier.
