紫苏籽油微胶囊喷雾造粒工艺及稳定性研究 被引量:2

摘要 采用喷雾造粒技术,以紫苏籽油为芯材,吐温-80和司盘-80为复配乳化剂,固体玉米糖浆为填充剂,测定乳化液粘度﹑粒径和紫苏籽油微胶囊包埋率,探究不同壁材、固形物含量﹑蠕动泵转速对制备紫苏籽油微胶囊的影响。结果表明:以酪蛋白酸钠为壁材,质量分数7.5%,芯壁比3:1,以固体玉米糖浆为填充剂,质量分数30%,造粒转速1200r/min时得到的紫苏籽油微胶囊包埋率最高为97.85%。并对此产品稳定性进行了研究,结果表明微胶囊产品具有良好的稳定性。 The perilla seed oil microcapsules was prepared by spray granulation,using the perilla seed oil as the core material,Tween-80 and Span-80 as compound emulsifiers and solid corn syrup as fillers,to determine the emulsion viscosity,particle size and the embedding rate of perilla seed oil microcapsules and explore the effects of different wall materials,solid content and peristaltic pump speed on the preparation of perilla seed oil microcapsules.The results show when used the sodium caseinate as wall material,mass fraction 7.5%,the core-to-wall ratio of 3:1,solid corn syrup as fillers,mass fraction 30%,and the granulation speed of 1200 r/min can get the highest microcapsule embedding rate is 97.85%.And the stability of this product has been studied,and the results show that the product has good stability.
