许昌市2016~2020年熟肉制品中亚硝酸盐监测结果分析

Analysis of monitoring results of nitrite in cooked meat products from Xuchang city during 2016〜2020

目的:通过河南省食品安全风险专项监测,了解近年来许昌市熟肉制品中亚硝酸盐的含量。方法:根据河南省食品污染物专项监测计划要求,2016~2020年共选择许昌市超市、熟食专营店和农贸市场随机采集的熟肉制品235份进行亚硝酸盐含量检测分析。结果:共监测样品235份,总的检出率为82.23%,超标率为18.72%。5年间超标率比较差异有统计学意义(χ^(2)=12.31,P<0.05)。不同销售地点的样品超标率差异有统计学意义(χ^(2)=14.07,P<0.05),散装样品比定型包装样品超标率高,超标率差异具有统计学意义(χ^(2)=5.90,P<0.05)。结论:亚硝酸盐在许昌市熟肉制品加工中使用仍然比较普遍,农贸市场销售的散装熟肉制品中亚硝酸盐超标率较高,相关部门要对使用单位进行经常性的监督检查,确保人们的饮食安全。

Objective: According to the special monitoring of food safety risks in Henan Province, to understand the content of nitrite in cooked meat products in Xuchang City in recent years.Methods: According to the requirements of the special monitoring plan for food contaminants in Henan Province, we collected 235 cooked meat products for nitrite content detection and analysis in supermarkets, cooked food specialty stores and farmer’s markets from 2016 to 2020.Results: A total of 235 monitored samples from 2016 to 2020, the total detection rate was 82.23%, and the over-standard rate was 18.72%. There was a statistically significant difference in the over-standard rate between five years(x2 =12.31,P<0.05). There was a statistically significant difference in the over-standard rate of samples from different sales locations(x2 =14.07, P<0.05). The over-standard rate of bulk samples was higher than that of stereotyped packaging samples, and the difference in over-standard rates was statistically significant(x2 =5.90,P<0.05).Conclusion: Nitrite is still commonly used in the processing of cooked meat products in Xuchang City. The excess rate of nitrite in bulk cooked meat products sold in the farmer’s market is relatively high. Relevant departments must conduct regular supervision and inspections on users to ensure people’s diet. Safety.
