童年饮食印象与热干面感官接受度的相关性研究

摘要 童年饮食印象往往影响着人们对食物的喜好,为了更好地了解童年饮食印象对热干面感官接受度的影响,现对不同人群进行问卷调查,研究不同人群童年饮食印象与热干面感官接受度之间的关系。采用SPSS软件对调查数据进行统计分析。分析结果表明,童年蔬菜喜好、肉类喜好、膨化食品喜好、糖果巧克力喜好、甜度喜好、咸度喜好、鲜度喜好、炒菜喜好以及童年饮食的满意度对热干面感官接受度有显著性影响。 Hot and dry noodles is a famous food in Wuhan,which is deeply loved by people.Childhood dietary impression often affects people’s food preferences.In order to better understand the impact of childhood dietary impression on sensory acceptance of hot and dry noodles,a questionnaire survey was conducted among different groups of people to study the relationship between childhood dietary impression and sensory acceptance of hot and dry noodles.SPSS software was used to analyze the survey data.The results showed that childhood vegetable preference,meat preference,puffed food preference,candy chocolate preference,sweetness preference,saltiness preference,freshness preference,food preference and childhood diet satisfaction had significant effects on sensory acceptance of hot and dry noodles.
