摘要
以红薯渣为原料,探讨红薯渣中提取果胶提取工艺条件。单因素实验基础上,以盐析液加入量、pH值、提取温度、料液比和作用时间为考察因子,采用正交试验优化提取果胶的工艺条件。实验结果表明,红薯渣中果胶提取的最佳工艺条件为:pH值为3,提取温度50℃,料液比1:10,作用时间80 min,在此条件下,果胶提取率为5.77%。
Taking sweet potato residue as raw material,the technological conditions of extracting pectin from sweet potato slag were discussed.On the basis of single factor experiment,the factor was examined by salting out,pH value for the amount of liquid,extraction temperature,liquid ratio and the effect time,technological conditions of extracting pectin were optimized by using orthogonal test.The experimental results showed that the optimum process conditions of extracting pectin from the sweet potato residue were as follows:the pH value was 3,extraction temperature was 50℃,material liquid ratio was 1:10,action time was 80 min.Under these conditions,pectin extraction yield was 5.77%.
