摘要
通过对浓香型白酒酿造微生物来源分析及窖泥作用的探究,结合多年的生产操作实际,分析了窖泥老化的原因并提出了一些对策措施,对今后的窖泥老化预防具有一定的指导作用。
Based on the analysis of the source of microbes and the role of pit mud in Luzhou flavor Baijiu liquor production,the causes of aging of pit mud were analyzed based on the production practice for many years,and some countermeasures were put forward.
