葵花籽油酶法脱胶工艺优化 被引量:6

Optimization of enzymatic degumming of sunflower seed oil

摘要 选取米曲霉磷脂酶C(PLC)对葵花籽油进行酶法脱胶。采用单因素试验分别研究了混合体系pH、酶解温度、酶解时间、加酶量和柠檬酸质量分数对葵花籽油酶法脱胶效果的影响。结果表明,葵花籽油酶法脱胶的最佳工艺条件为:混合体系pH 7.5,酶解温度25℃,酶解时间3 h,加酶量5000 U/kg,柠檬酸质量分数20%(添加量0.1%)。在最佳工艺条件下,葵花籽油磷含量从55.8 mg/kg降至8.2 mg/kg,脱胶率为85.3%,达到植物油工业精炼要求(磷含量≤10 mg/kg)。 The sunflower seed oil was degummed using phospholipase C from Aspergillus oryzae.The effects of mixed system pH,enzymolysis temperature,enzymolysis time,enzyme dosage and mass fraction of citric acid on degumming effect of sunflower seed oil were studied by single factor experiment.The results showed that the optimal parameters were obtained as follows:mixed system pH 7.5,enzymolysis temperature 25℃,enzymolysis time 3 h,enzyme dosage 5000 U/kg,mass fraction of of citric acid 20%(dosage 0.1%).Under the optimal conditions,the phospholipid content of degummed oil was reduced by 85.3%(from 55.8 mg/kg to 8.2 mg/kg),which could satisfy the requirements for industrial oil refining(phospholipid content≤10 mg/kg).
