摘要
清代皇帝地位尊崇,饮食丰富多样。在长期的发展过程中,清宫逐步确立了多元的食材供应格局。户部、皇庄、地方官员、内府都在其中扮演了重要角色。通过对清宫档案的梳理发现:这些食材来源各有侧重,长期并存,且在不同时期分别扮演了不同的角色,但都是宫中御膳制作的重要保障。清宫御膳食材来源的多元化,是清宫饮食日益丰富的反映,更是皇权至上的结果。
The emperors of the Qing Dynasty(1644-1911)enjoyed sacrosanct status and varied diet.After a long period,the Qing palace gradually established its food supply system in which the Ministry of Treasury,the imperial farms,the local officials and the Court Affairs Department all played a part.An examination of the imperial archives finds that these food sources have their own emphasis and have coexisted for a long time to provide guarantee for the production of imperial food.The diversification of the sources of the imperial food in the Qing Dynasty reflects the increasing abundance of the imperial food and the supremacy of imperial power.
