副干酪乳杆菌HD1.7在乙酸胁迫下转录组学研究 被引量:4

摘要 利用转录组学技术,研究不同浓度乙酸胁迫对副干酪乳杆菌HD1.7生长代谢和细菌素产生的影响。结果表明:与CK组相比,2 g·L^(-1)、6 g·L^(-1)和10 g·L^(-1)乙酸胁迫试验组细菌素浓度分别提高了27.88%、131.84%和133.92%,而且10 g·L^(-1)乙酸胁迫试验组明显降低了葡萄糖利用率、乙酸代谢和乳酸代谢。转录组学数据中差异基因数分别为36、269和296,KEGG富集分析得出6 g·L^(-1)和10 g·L^(-1)乙酸试验组会使胞内氨基酸代谢发生改变,而且后者胞内脂肪酸代谢也发生改变。 Transcriptomics technology was used to study the effects of different concentrations of acetic acid stress on the growth metabolism and bacteriocin production by Lactobacillus paracasei HD1.7.The results showed that compared with the CK group,the bacteriocin concentration of the 2 g·L^(-1),6 g·L^(-1) and 10 g·L^(-1) acetic acid stress test groups increased by 27.88%,131.84%and 133.92%,respectively.Moreover,in the 10 g·L^(-1) acetic acid stress test group,glucose utilization,acetic acid metabolism and lactic acid metabolism were significantly reduced.The number of differential genes in the transcriptome data were 36,269,and 296,respectively.KEGG enrichment analysis showed that the 6 g·L^(-1) and 10 g·L^(-1) acetic acid test groups would change the intracellular amino acid metabolism.Moreover,the intracellular fatty acid metabolism of the latter also changes.
