摘要
5′-肌苷酸具有独特鲜味,在食品、药品和饲料等多个领域发挥重要作用。目前,肌苷酸主要通过发酵与化学磷酸化相结合工艺进行生产,而生物磷酸化应用中最具前景的是酸性磷酸酶转化法。与传统化学磷酸化法相比,酶转化法具有专一性强、反应条件温和和绿色环保等优点。笔者综述了酸性磷酸酶、重组菌株构建及对转化生产肌苷酸工艺的研究现状,为5′-肌苷酸的进一步推广应用奠定基础。
Inosine-5′-monophosphate has a unique flavor and plays an important role in food,medicine,feed and other fields.At present,inosine-5′-monophosphate is mainly produced by the combination of fermentation and chemical phosphorylation.The most promising application of biological phosphorylation is the acid phosphatase-catalyzed biotransformation method.Compared with the traditional chemical phosphorylation method,biocatalysis has the advantages of high specificity,mild reaction conditions and environmental protection.Acid phosphatase,the construction of recombinant strains and the research on inosine-5′-monophosphate production were reviewed,which laid a foundation for further applications.
