摘要 本文就微包埋制备技术中的壁材,芯材,常见微包埋制备方法,微包埋制备方法近年来的新发展;微包埋技术在益生菌中应用现状,包括益生菌微包埋壁材选择、微包埋方法现状、微包埋最新方法、微包埋方法在益生菌中应用现状概述以及该技术在益生菌中应用展望,进行了系统的综述。微包埋技术是目前研究开发的高新技术之一,将该技术应用于益生菌尤其是非芽孢类乳酸菌,可以较好地解决益生菌自身存在的不足,提高其耐热、抗氧、抗胃酸以及肠溶性等性能,可提高其在生产加工、贮存、运输、销售以及在宿主消化道内逆环境的抵抗力,从而能更有效地发挥其益生功能作用。随着人们对微包埋技术认识的不断加深,新材料、新设备、新技术的不断开发,微包埋益生菌必将会得到越来越广泛的应用。 This article have carried on the system summary about wall materials and core materials in microencapsulation technology,common preparation methods of microencapsulation,new microencapsulation methods developed in recent years;application of microencapsulation technology in probiotics including selection of wall materials,current status of methods,the latest methods and application status;application prospect of microencapsulation technology in probiotics.Microencapsulation technology is one of the high and new technologies,the technique was applied to probiotics,especially non-spore-forming lactic acid bacteria,it can solve the deficiency of probiotics,improve its heat resistance,anti-oxidation,anti-stomach acid and intestinal solubility and other properties;improve its resistance to adverse environment in production processing,storage,translocation,sale and in host digestive tract,play its probiotic function more effectively.Microencapsulated probiotics will be used more and more widely with the development of people's understanding of microencapsulation technology and the continuous development of new materials,new equipment and new technology.
