摘要
随着人们生活水平的提高及对健康饮食习惯的越发重视,功能性甜味剂逐渐受到人们的青睐。D-塔格糖、海藻糖、D-阿洛酮糖和L-阿拉伯糖是目前较为重要的几种稀有糖,因其独特的特性和生理功能,成为近年来功能性甜味剂领域的研究热点。稀有糖虽然在自然界中含量极少,但在食品行业、医药行业、日用化工行业等诸多领域都有着广泛的应用。简述4种重要稀有糖(D-塔格糖、海藻糖、D-阿洛酮糖和L-阿拉伯糖)的理化特性、来源、生产方法以及生物学功能等内容,并对稀有糖的研究与应用前景加以展望。
In recent years,along with the living standard’s enhancement,people’s attention to health gradually increases,corresponding the attention to functional sweeter also has further enhancements.D-tagatose,trehalose,D-allulose and L-Arabinopyranose are the important part of rare sugars.Because of their unique physical and chemical properties,they have been the focus of functional sweeter study.Rare sugars are defined as monosaccharides and their derivatives rarely exist in nature.They play an important role in the field of food,medicine and cosmetic.Sources,physical chemistry character,product approaches and biological activity of several rare sugars are described.In addition,current research and application perspectives of rare sugars are also proposed.
