摘要
目的了解目前学校学生餐的基本情况、《学生餐营养指南》(WS/T 554-2017)在学校的使用情况,以及此标准在实施过程中存在的问题,并收集相关的意见。方法2018年9—11月,项目组随机选取北京市、河北省石家庄市、山东省烟台市、安徽省宿州市、浙江省温州市、湖北省十堰市和重庆市7个城市作为调查点,以有食堂的中小学校作为调查对象开展问卷调查。结果在人员培训和学生餐管理、食物供应和烹饪方式选择方面,大部分学校能够满足《学生餐营养指南》标准的要求,仅牛奶供应方面存在明显不足,不提供牛奶的学校达68.12%。标准的知晓率达到80.35%,但其中有56.52%的学校并不知晓此标准配套的免费软件。63.32%的被调查学校认为通过将卫生行业标准提高为国家标准更有利于该标准在教育系统的推广力度。结论在标准宣贯过程中,除了将标准文本的解读作为标准宣贯的重点外,还应加强配套软件的宣贯。同时,为提高学生餐营养状况,建议修订为更利于全国推广的国家标准。
Objective According to the investigation and analysis of general situation of school meal and the application of the“Nutrition guidelines of school meals”(WS/T 554-2017)in schools,the main problems and their solutions have been suggested.Methods From September to November 2018,seven cities were randomly selected for the survey,including Beijing,Shijiazhuang of Heibei province,Yantai of Shandong province,Suzhou of Anhui province,Wenzhou of Zhejiang province,Shiyan of Hubei province and Chongqing.The objects of the survey were primary and middle schools with canteens.Results Most of the surveyed schools can meet the requirements of the“Nutrition guidelines of school meals”in terms of personnel training and school meal management,food supply and cooking method selection.It was obvious insufficient in milk supply,with 68.12%of schools did not providing milk.The awareness rate of the standard reached 80.35%,but 56.52%of the schools did not know that the Standard had free software.63.32%of the surveyed schools believed that the promotion of the Standard in the education system can be improved by raising the health industry standard to a national standard.Conclusion In addition to the interpretation of standard texts as the focus of standard publicity and implementation,the publicity and implementation of supporting software should also be strengthened in the process of standard publicity and implementation.At the same time,in order to improve the nutritional status of school meals,it is recommended to amend to a national standard that is more conducive to national promotion.
