摘要
茶多酚是一种天然的具有抗氧化性的物质,在食品领域应用广泛,尤其是在水产品保鲜中发挥着重要作用。本文结合茶多酚的性质和作用机理,阐述茶多酚与4种常见生物保鲜剂壳聚糖、迷迭香、溶菌酶、虾青素复配后在水产品贮藏保鲜中的应用研究进展,为茶多酚应用于水产品保鲜领域提供更多可能性。
Tea polyphenols are a natural anti-oxidant substance,which is widely used in the food field,especially playing an important role in the preservation of aquatic products.In this paper,combining the properties and mechanism of tea polyphenols,the application research progress of tea polyphenols and four common biological preservatives chitosan,rosemary,lysozyme,and astaxanthin in the storage and preservation of aquatic products are described.It provides more possibilities for the application of tea polyphenols in the field of aquatic products preservation.
