基于地域特色背景下津菜文化的弘扬与创新

摘要 天津地处九河下梢,独特的地理区位形成了津派文化的多元性,津菜文化附着于津派文化中,也形成了津菜河海两鲜、开放包容的餐饮特色。近年来,在新零售浪潮、智能科技渗透、资本介入等大背景下,天津餐饮业迎来了巨大的机遇与挑战,津菜文化在继承和弘扬传统文化的同时,也要紧紧围绕品牌建设进行理念创新、制度创新、机制创新、商业模式创新,以适应餐饮业发展的需要。 Tianjin is located at the junction of nine rivers converging into the sea.The unique geographical location has formed the diversity of Tianjin cuisine culture.Due to Tianjin style culture,Tianjin cuisine has formed the open and inclusive catering characteristics,which are represented by aquatic products.In recent years,because of the new retail style,the introduction of intelligent science and technology and the capital intervention,Tianjin catering industry has ushered in great opportunities and challenges.Tianjin cuisine culture should not only inherit and carry forward traditional culture,but also focus on brand construction depending on innovation of concept,system,mechanism,business model,in order to meet the needs of the catering industry development.
