乳蛋白是牛奶固形物的重要组成成分,氨基酸含量和比例较为理想,是1种营养价值较高的蛋白质。了解乳蛋白合成的影响因素和调控机制,对指导奶牛养殖业在高效、健康、绿色、和环保的理念下提高乳蛋白的含量具有重要意义。文章就激素、信号通路、关键基因、瘤胃微生物及其发酵产物对奶牛乳蛋白合成影响的研究进行综述,为探索提升乳蛋白合成量提供参考。

Milk protein is the main component of milk solids,and the content and proportion of amino acids are relatively ideal,which is a kind of protein with high nutritional value.It is of great significance to improve milk protein content under the guidance of high efficiency,health,green and environmental protection in dairy farming and to understand the influencing factors and regulatory mechanisms of milk protein synthesis.The paper reviews the studies on hormones,signaling pathways,key genes,rumen microorganisms and their metabolites on dairy cow milk protein,and provided references for exploring the promotion of milk protein synthesis.
