摘要
【目的】检测不同地区紫苏籽油脂肪酸组成与氧化稳定性,比较不同温度、不同天然抗氧化剂对紫苏籽油氧化稳定性的影响,确定紫苏籽油最适宜的储存条件,为合理延长油品货架期提供方法参考。【方法】收集贵州、甘肃、黑龙江、吉林及内蒙古等不同地区的紫苏籽榨油,分别进行脂肪酸组成鉴定,对初榨紫苏籽油的氧化稳定性进行分析,并在不同温度、不同抗氧化剂条件下储存,比较紫苏籽油氧化稳定性。【结果】不同地区紫苏籽油中脂肪酸组成基本相同,均为棕榈酸、硬脂酸、油酸、亚油酸和亚麻酸;不同地区紫苏籽油的酸值和过氧化值均在行业标准规定的一级标准范围,5个地区紫苏籽油样品的酸值平均为1.38 mg/g,过氧化值6.75 meq/kg。4℃储存紫苏籽油可有效延长其储存期;天然抗氧化剂中,维生素C对紫苏籽油储存时氧化稳定性的影响最大,且在浓度为0.1 g/kg时效果最佳。【结论】不同地区紫苏籽油中脂肪酸组成相同,氧化稳定性均良好。添加0.1 g/kg维生素C,于4℃条件下储存,是紫苏籽油最佳储存条件。
【Objective】The optimum storage condition of purple perilla oil is discussed by detecting fatty acid composition and oxidative stability of purple perilla oil from different areas and studying the effect of different temperature and natural antioxidants on oxidative stability of purple perilla oil to provide a reference for rational prolongation of oil shelf life.【Method】The fatty acid composition and oxidative stability of purple perilla oil from Guizhou,Gansu,Heilongjiang,Jilin and Inner Mongolia are identified and detected respectively.The effect of temperature and natural antioxidants on oxidative stability of purple perilla oil is studied.【Result】The fatty acid composition of purple perilla oil from different areas is the same basically and the compositions are palmitic acid,stearic acid,oleic acid,linoleic acid and linolenic acid.The acid value and peroxide value of purple perilla oil from different areas both reach the primary standard range of the industrial standard requirements.The average acid value and peroxide value of purple perilla oil from five areas is 1.38mg/g and 6.75 meq/kg separately.The shelf life of purple perilla oil can be effectively prolonged at 4℃.The V C has the best effect on oxidative stability of purple perilla oil during its storage period among three natural antioxidants and the optimum V C concentration is 0.1 g/kg.【Conclusion】The fatty acid composition of purple perilla oil from different areas is the same basically and their oxidative stability is good all.The optimum storage conditions of purple perilla oil are adding 0.1 g/kg V C and at 4℃.
