摘要
绿咖啡是未经烘焙或烘焙程度极低的咖啡,保留了绿原酸为代表的功效成分,具有改善糖尿病、控制体重、干预代谢综合征、防治高血压等功效。本文综述了绿咖啡的功效成分、功能特性进展及绿咖啡在食品中的应用情况,以期为后续绿咖啡产品的深入研究及精深加工提供参考。
Green coffee is a kind of coffee without roasting or with very low roasting degree.It retains chlorogenic acid as its active ingredient,and has the functions of improving diabetes,weight control,intervening metabolic syndrome,preventing and curing hypertension.In this paper,the functional components,functional properties and the application of green coffee in food were reviewed,in order to provide reference for further research and intensive processing of green coffee.
