摘要
壳聚糖是天然的阳离子多糖,被广泛应用于食品、航天、农业、化工、医药等多个行业领域。壳聚糖独特的理化特性使得其在食品应用领域表现出了良好的应用前景。本文对壳聚糖的结构和性质进行了简要整理,综述了它在食品工业中的应用现状,以期对壳聚糖的应用研究提供一定的参考与理论依据。
Chitosan is a natural cationic polysaccharide,which is widely applied in food,aerospace,agriculture,chemical,pharmaceu-tical and other industries.The unique physicochemical properties of chitosan have given it great application potential in food industry.This article briefly describes the structure and properties of chitosan,and summarizes its application status in food industry,so as to provide reference and theoretical basis for the application of chitosan.
