铁皮石斛花食疗代餐粉的研制及其冲调性研究

Study on the Development of Meal Replacement Powder for Dietotherapy of Dendrobium Officinale Flowers and Its Brewing Properties

利用铁皮石斛花的多重功效,辅以五谷杂粮,可搭配出适合糖尿病等特殊人群的食疗代餐粉。通过单因素和正交实验方法确定代餐粉的最佳配方,结合对其基本营养成分、溶解度、结块率、润湿下沉性等质量指标的测定,进一步提升该代餐粉的质量品质。该代餐粉在铁皮石斛花0.1 g的含量下,分别加入玉米8 g,山药5 g,黄豆8 g,荞麦8 g,银杏0.2 g,苦瓜0.5 g,枸杞3 g,黑芝麻3 g,大麦嫩苗粉2 g的配方是最佳的。在此配方下测定的蛋白质含量为26%,脂肪含量为15%,碳水化合物含量为15%,溶解度是86%,结块率是13%,润湿下沉时间是157s/65s。在该最佳配方下制得的铁皮石斛花代餐粉感官品质和理化品质最佳,为铁皮石斛花深加工的新方向奠定基础。

[Objective]Using the multiple functions of Dendrobium officinale flowers,supplemented by whole grains,it can be matched with a diet meal replacement powder suitable for special people such as diabetes.[Method]In this paper,the best formula of meal replacement powder was determined by single factor and orthogonal experiment,and the quality indexes such as basic nutrient composition,solubility,caking rate,wetting and sinking were determined to further improve the quality of the meal replacement powder.[Result]Under the content of 0.1g of Dendrobium officinale flower,the best formula of the meal replacement powder was corn 8g,yam 5g,soybean 8g,buckwheat 8g,ginkgo 0.2g,bitter gourd 0.5g,medlar 3g,black sesame 3g and barley seedling powder 2g.Under this formula,the protein content,fat content,carbohydrate content,solubility,caking rate and wetting and sinking time were 26%,15%,15%,86%,13%and 157s/65s,respectively.[Conclusion]The sensory quality and physical and chemical quality of Dendrobium officinale flower meal replacement powder prepared under the optimum formula are the best,which lays a foundation for the new direction of Dendrobium officinale flower deep processing.
