摘要 为确定刺梨粉喷雾干燥最佳助干剂种类与添加量,研究不同DE值麦芽糊精及β-环糊精添加量对刺梨果粉的品质影响,采用逼近理想解排序法(TOPSIS)结合模糊数学法筛选最佳处理条件。结果表明,添加60%β-环糊精作为助干剂时刺梨果粉集粉率最高,为26.10%,对VC、黄酮含量保护较好,TOPSIS评价显示果粉综合品质最优。因此,选取60%β-环糊精作为刺梨汁喷雾干燥的助干剂。 In order to determine the best type and amount of drying aid for spray drying of Rosa roxburghii Tratt powder,the effects of different DE values of maltodextrin and β-cyclodextrin addition on the quality of Rosa roxburghii Tratt powder were studied,and the TOPSIS technique was adopted to filter the best processing conditions in combination with fuzzy mathematics.The results show that when 60% β-cyclodextrin was added as a drying aid,the powder collection rate of Rosa roxburghii Tratt fruit powder was the highest,which was 26.10%,which has better protection of Vc and flavonoids content.The TOPSIS evaluation showed that the comprehensive quality of fruit powder was the best.Therefore,60% β-cyclodextrin was selected as the drying aid for spray drying of Rosa roxburghii Tratt juice.
