摘要
随着全球各类慢性病人数的不断上涨,消费者对饮食健康的重视程度日益上升,各类以低糖、低脂、低热量为主的健康食品呈爆发式增长。阿洛酮糖是D-果糖的C-3的差向异构体,甜度相当于蔗糖的70%,但仅提供0.4 kcal·g^(-1)能量,同时具有控制血糖、降血脂等生理功效。本文结合国内外阿洛酮糖的研究进展,综合讨论了阿洛酮糖的生理特性及应用前景。
As chronic patients rise around the world,consumers are paying more and more attention to healthy diet,all kinds of healthy foods with low sugar,low fat,and low calorie have exploded.Allulose is the C-3 epimer of D-fructose,with 70%sucrose sweetness,but only provides 0.4 kcal·g^(-1) energy,and has physiological effects such as blood sugar control and blood lipid reduction.This article comprehensively combines the research progress of allulose at home and abroad,comprehensively discusses the physiological characteristics and application prospects of allulose.
