中国北方主要养猪省份生猪产品重金属污染分析

Analysis of heavy metal pollution inlive pig products in major pig-raising provinces in northern China

摘要 以长江以北生猪养殖大省(河南、河北、山东)的生猪可食部分(猪后腿肉、肝脏、肾脏)为研究对象,采用电感耦合等离子体质谱法(ICP-MS)和原子荧光光谱分析法(AFS),测定了铬、铜、砷、镉、铅、汞等典型重金属元素的含量,以此进行重金属的污染特征评估,探究重金属含量在生猪可食部分的分布规律。研究表明,不同地区的生猪可食部分的重金属含量不同,重金属主要富集在生猪的肝脏和肾脏,其中铜的总含量最高,而铬、砷、镉、铅、汞的含量普遍较低。研究结果有助于了解北方主要养猪省份生猪可食用组织中重金属污染分布规律,为解决生猪产品安全提供参考。 Theedible portion of live pig(pork hindquarter,liver,kidney)in major pig breeding provinces(Henan,Hebei,Shandong)north of the Yangtze river were taken as research object.The inductively coupled plasma mass spectrometry method(ICP-MS)and atomic fluorescence spectral analysis method(AFS)were adopted,and the content of typical heavy metal elements such as chromium,copper,arsenic,cadmium,lead,mercury was determined,and the pollution characteristics of heavy metals were evaluated,and the distribution of heavy metals content in the edible portion of live pig was explored.The results showed that the content of heavy metals in the edible portion of pig from different regions was different,andheavy metals were mainly concentrated in the liver and kidneys of live pig,and the total content of copper was the highest,while the content of chromium,arsenic,cadmium,lead,and mercury was generally low.The research results were helpful to understand the distribution of heavy metal pollution in the edible tissues of live pig in the major pig-raising provinces in the northern China,and it provided a reference for solving the safety of live pig products.
