不同基材复配姜黄素复合膜的制备与表征 被引量:3

摘要 开发一种能够实时反映食品新鲜度变化的新型智能指示膜。本研究以马铃薯淀粉、聚乙烯醇、壳聚糖两两互配作为成膜基材复配姜黄素制成可以检测食品新鲜度的智能指示膜,并对3种不同的指示膜的厚度、含水率、水溶性、机械性能、微观结构、抗氧化能力等方面进行了研究并比较了三者之间的差异。在力学性能测试中,聚乙烯醇/壳聚糖/姜黄素复合膜在3种复合膜中的拉伸强度最强,为99.30 MPa。断裂伸长率最大的为聚乙烯醇/淀粉/姜黄素复合膜,为66.43%,但含水率最低,为23.06%,表明其稳定性较高。在水溶性测试中,聚乙烯醇/淀粉/姜黄素复合膜最高,为37.98%,壳聚糖/聚乙烯醇/姜黄素复合膜的水溶性最低,为23.09%。扫描电镜结果表明3种复合膜的微观结构有明显的差异。姜黄素的加入明显增强复合膜对DPPH自由基清除能力与抗氧化能力。壳聚糖/聚乙烯醇/姜黄素复合膜综合性能较其他两种膜高。 A new intelligent indicator film was developed for real-time monitoring of food freshness.Three kinds of composite films which could detect food freshness were prepared by using binary combinations of starch, polyvinyl alcohol and chitosan as the solid substrate incorporated with curcumin.The thickness, water content, water solubility, mechanical properties, microstructure and antioxidantic function of the composite films were characterized and compared.The results show that the chitosan/polyvinyl alcohol/curcumin composite film has the highest tensile strength(99.30 MPa),and the polyvinyl alcohol/starch/curcumin composite film has the highest elongation at break(66.43%),the lowest water content(23.06%)and indicating high stability.The polyvinyl alcohol/starch/curcumin composite film has the highest water solubility(37.98%),and chitosan/polyvinyl alcohol/curcumin composite film has the lowest water solubility(23.09%).Scanning electron microscopic photographs show that the composite films have different microstructures.With the addition of curcumin, the scavenging rate of DPPH free radical and the antioxidant ability of the composite film are significantly improved.The comprehensive performance of chitosan/polyvinyl alcohol/curcumin composite film is higher than that of the other two films.
