摘要
我国是稻谷的生产加工大国,稻谷加工过程中产生了大量的副产物——米糠,其营养价值非常丰富,加工潜力巨大。目前我国只有10%~15%的米糠进行了深层次开发利用,这与一些发达国家尤其是与日本相比,在加工技术先进度、综合利用度以及经济效益方面都差距甚大。本文通过整理,总结了当前米糠主要生物活性物质及其有效的提取方法,生理功能特性,以及在食品、化妆品及医药领域中的应用情况,以期为我国米糠高附加值利用提供研究参考。
The nutritional value of rice bran which was the main by-product of rice processing was very rich,the processing potential of rice bran was huge.At present,only 10%~15%of rice bran has been deeply developed and utilized in China.Compared with some developed countries,especially Japan,there was a wide gap in the processing technology,utilization and economic benefits of rice bran.In the present paper,the main bioactive substances of rice bran,their effective extraction methods,physiological functions and applications in food,cosmetics and medicine were summarized to provide some research ideas for the high value-added utilization of rice bran in China.
