数字孪生技术在白酒酿造行业的应用前景 被引量:3

Application Prospect of Digital Twin Technology in Chinese Baijiu Brewing Industry

摘要 白酒历史悠久、规模庞大,是我国经济和文化重要组成部分。在新一代信息数字化技术发展应用和《中国制造2025》规划背景下,传统白酒酿造向智能酿造转型势在必行。针对白酒企业生产过程中如何保障连续工艺稳定、增产降耗、控制复杂工况变化等问题,提出引入数字孪生概念、构建数字孪生模型、搭建酿造产线数据管理平台中心和结合人工智能技术的相关算法,以实现生产全过程模拟仿真与优化控制,全面提升企业生产效能。探讨数字孪生技术结合白酒企业在工艺参数优化、全面质量控制、设备维护保障、窖池发酵等多方面应用效果,以期有效保障酒企量质生产,降本增效,提高经济效益,加快白酒转型升级的步伐。 With a long history and a large scale, Chinese Baijiu is an important part of China’s economy and culture. Under the background of the development and application of the new generation of digital information technology and the Made in China 2025 planning, the transformation from traditional liquor brewing to intelligent brewing is inevitable. To address the problems of how to ensure continuous process stability, to increase production, to reduce consumption, and to control changes in complex working conditions in the production process of liquor enterprises, it is to introduce the concept of digital twin, to build a digital twin model, to construct a brewing line data management platform center and to combine relevant algorithms of artificial intelligence technology to realize whole-process simulation and optimal control of production, so as to comprehensively improve the production efficiency of enterprises. The application of digital twin technology in Baijiu enterprises in terms of process parameters optimization, overall quality control, equipment maintenance guarantee, and pit fermentation are discussed. It can effectively guarantee the quality production of Baijiu enterprises, reduce the cost and increase efficiency, increase economic benefits, and speed up the step up of Baijiu transformation and upgrading.
