梵净山枸杞叶茶营养成分分析 被引量:1

Nutritional Components of Wolfberry Leaf Tea in Fanjing Mountain

摘要 对梵净山地区栽培的叶用枸杞为原料加工而成的枸杞叶茶的主要营养成分、氨基酸含量、游离氨基酸含量、矿物质含量和重金属含量进行了分析测定。结果表明:梵净山枸杞叶茶蛋白质含量为30.00%,含人体所需的矿物质和18种氨基酸,总氨基酸含量高达24.05 g/100 g,呈味氨基酸含量为11.28 g/100 g,必需氨基酸指数为21.47。维生素含量为143.89 mg/100 g,其中β-胡萝卜素含量为81.1 mg/100 g,泛酸含量为37.90 mg/100 g。矿质元素总量达到59 545 mg/kg,其中常量元素含量为59 490 mg/kg,微量元素含量为54.95 mg/kg。重金属元素含量测定结果符合食品安全国家标准和相关行业标注与地方标准。 Some of the major nutritional components, including amino acid contents, mineral elements, heavy metal elements in wolfberry leaf tea from Fanjing Mount were determined. The results showed that the rich protein content was 30.00 g/100 g,including 18 kinds of amino acids, the total amino acid content was 24.05 g/100 g, the delicious amino acid content was 11.28 g/100 g, and the essential amino acid index was 21.47. The total vitamin content was 143.89 mg/100 g, including 81.1 mg/100 g of β-carotene and 37.90 mg/100 g of pantothenic acid. The total mineral elements reached 59 545 mg/kg, including 59 490 mg/kg of constant elements and 54.95 mg/kg of trace elements. The content of heavy metals was in accordance with national food safety standards and relevant industry and local standards.
