趵突泉浓香型白酒有机窖泥的培养研究 被引量:1

摘要 介绍了趵突泉有机窖泥的4种试验配方,包括有机窖泥的具体配料及其制作过程;对各配方有机窖泥的微生物种类、感官指标以及水分含量、pH值、氨态氮、有效磷、有效钾和腐殖质等主要理化指标和微生物情况进行追踪对比研究;陈述了趵突泉酒厂判断成熟有机窖泥的检验标准,以及在改造老化窖池时的使用方法;有机窖泥培养的目的是培养优质有益菌群,为有益微生物创适一个良好的生长环境使之能持续有效地生长。 This paper introduces four formulas of organic pit mud,including the specific ingredients and the production process.The main physical and chemical indexes of the organic pit mud are tracked and compared,including microbial species,sensory indexes,moisture content,pH value,ammonia nitrogen,available phosphorus,available potassium,and humus.The judgment standards of mature organic pit mud and the measures taken to reform aged pits are introduced.The purpose of organic pit mud cultivation is to cultivate high-quality and beneficial microorganisms,to create a good growth environment for the beneficial microorganisms,and to make them grow continuously and effectively.
