摘要 乳酸菌是益生菌的典型代表,具有多种益生作用,包括降低血清胆固醇含量、维持肠道菌群平衡、增强机体免疫、发挥抑菌特性和预防癌症等。基于以上益生特性,乳酸菌已广泛应用于食品工业、动物饲料和医疗保健等领域,具有良好的发展前景。乳酸菌资源的可利用价值高,了解研究现状和应用动态对于后续的功能开发具有显著的意义。该文对乳酸菌的来源概况、益生特性及其应用现状进行了简要综述,旨在为进一步开发益生性乳酸菌提供参考。 As a typical representative of probiotics,lactic acid bacteria have a variety of probiotics functions,includ⁃ing reducing serum cholesterol content,maintaining the balance of intestinal flora,enhancing the body′s immunity,exerting antibacterial properties and preventing cancer,etc.Based on the above probiotic characteristics,lactic acid bacteria are widely used in food industry,animal feed and medical and health care fields,and have a good develop⁃ment prospect.The utilization value of lactic acid bacteria resources is high,so it is significant to understand the re⁃search status and application dynamics for the subsequent functional development.In this paper,the source,probiot⁃ic characteristics and application status of lactic acid bacteria were briefly reviewed in order to provide specific sug⁃gestions for the further development of beneficial lactic acid bacteria.
