摘要
以常山胡柚鲜果为原料,采用酶-化学联合法对果实中果皮内的不溶性膳食纤维(IDF)的提取工艺进行研究,以期获得提取的最佳工艺及其参数条件,为日后更好的开发利用提供理论依据。经单因素及L_(9)(3^(4))正交试验的结果表明,影响常山胡柚IDF提取得率的主次因素顺序为:淀粉酶浓度>碱解时间>酶解时间>碱浓度;其最佳的提取工艺条件是:淀粉酶浓度0.5%,酶解时间70min,碱浓度0.9moL/L,碱解时间70min。所得结果可为今后的进一步推广应用提供参考。
Using Changshan-huyou as raw materials,adopting enzyme chemical combination method to study the extraction technology of insoluble dietary fiber in Changshan-huyou peel,in order to achieve the optimum conditions of extraction technology and to provide the theory for better development and utilization in the future.After carried out the single factor experiment and L_(9)(3^(4)) orthogonal experiment on the four factors,the results showed that the order of influence factors on productivity of Changshan-huyou IDF was:diastasum diastace density>alkali solution time>enzymatic hydrolysis time>concentration of NaOH;the optimum extraction conditions of Changshan-huyou IDFwere:diastasum diastace density 0.5%,enzymatic hydrolysis time 70min,concentration of NaOH 0.9moL/L and alkali solution time 70min.This result may provide reference for better utilization in the future.
