重庆市冷链食品从业人员食品安全认知状况调查

Investigation on food safety cognition among employees of food cold-chain industry in Chongqing

摘要 目的了解冷链食品从业人员食品安全认知情况,为开展健康教育提供参考。方法2020年11月10日-12月10日采取方便抽样法抽取重庆市242名冷链食品从业人员进行问卷调查。调查内容包括人口学特征、食品安全知识来源渠道、对新型冠状病毒肺炎疫情的关注程度、工作场所的食品卫生管理状况、对食品安全影响因素的主观认知、对食源性疾病知识和新冠知识的了解程度。结果重庆市242名冷链食品从业人员的食品安全知识主要来源于政府宣传(82.64%),其次来源于自媒体/网络(70.25%)。92.56%的调查对象接受过食品卫生知识培训。重庆市242名冷链食品从业人员的食品安全知识得分为7.29±1.68,处于中等水平。男性、40~60岁、储存环节的人员对食品安全知识的了解程度相对较高,小学以下文化程度人员对食品安全知识的了解程度较低。学历、工作环节是冷链食品从业人员食品安全知识得分的影响因素(均P<0.05)。结论重庆市冷链食品从业人员食品安全认知处于一般水平。监管部门须制定考核管理办法,同时企业也应制定员工健康教育计划,帮助员工提升安全认知。 Objective To understand the food safety cognition on employees of food cold-chain industry,provide reference for carrying out the health education.Methods Convenient sampling method was used to collect 242 employees of food cold-chain industry in Chongqing for questionnaire survey from November 10 to December 10,2020.The survey contents included the demographic characteristics of the subjects,the sources of food safety knowledge,the degree of attention to the Coronavirus Disease 2019(COVID-2019),the status of food hygiene management in the workplace,the subjective cognition of the influencing factors of food safety,and the understanding of the knowledge of food borne diseases and the COVID-2019.Results The food safety knowledge of employees of food cold-chain industry mainly came from government publicity(82.64%),followed by We-Media/internet(70.25%).92.56%of the respondents had received food hygiene knowledge training.The score of food safety knowledge among employees of food cold-chain industry was 7.29±1.68,which was in the middle level.People who are male,aged 40-60 years old,and in storage link had a relatively high level of knowledge about food safety,while those with education level below primary school had a low level of knowledge.Education and work link were the influencing factors of score of food safety knowledge among employees of food cold-chain industry(both P<0.05).Conclusion The food safety cognition of employees of food cold-chain industry in Chongqing is at the general level.Supervision departments can formulate assessment management methods,and enterprises can formulate health education plans,so as to help employees improve safety awareness.
