摘要 4-羟基-2,5-二甲基-3(2H)-呋喃酮(HDMF)是一种具有水果香味和焦糖气味的天然香料,在食品、饮料、烟草、化妆品等工业之中应用广泛。简述了微生物代谢合成HDMF的微生物种类、分子机制、培养条件和酶学调控的研究进展,为微生物合成HDMF及其应用提供参考。 4-Hydroxy-2,5-dimethyl-3(2H)-furanone(HDMF)was a natural flavor with fruit flavor and caramel flavor.It was widely used in food,beverage,tobacco,cosmetics and other industries.The present review briefly describes the microbial species,molecular mechanisms,culture conditions and enzymatic regulation of the microbial synthesis of HDMF by microorganisms,and provided references for the microbial synthesis and application of HDMF.
