麝香草酚包合物的制备工艺优化及其评价 被引量:2

摘要 麝香草酚由于具有抗氧化、抗菌、抗炎等优点,可使其能够应用于食品、医药等行业.但麝香草酚水溶性差、易挥发及特殊气味等特性限制了其广泛使用.为解决这些问题,以β-环糊精(β-CD)为壁材,采用饱和水溶液法制备麝香草酚-β-CD包合物.主要研究了壁芯比、搅拌时间、搅拌温度对包合率的影响.探索了制备麝香草酚-β-CD包合物的最佳工艺参数.然后,通过XRD和傅里叶红外光谱技术对包合物进行表征.进一步对包合物中麝香草酚的水溶性及高温稳定性进行分析.结果表明麝香草酚-β-CD包合物最佳的工艺制备参数:壁芯比(摩尔比)为1.25∶1、搅拌时间为2.6 h、搅拌温度为50℃,其包合率为84.51%.相比较于纯麝香草酚,麝香草酚-β-CD包合物表现出更强的高温稳定性和水溶性. Thymol can be used in food,medicine and other industries because of its antioxidant,antibacterial and anti-inflammatory advantages.However,the characteristics of thymol such as poor water solubility,volatilization and special odor limit its wide use.In order to solve these problems,thymolβ-CD inclusion complex was prepared by saturated aqueous solution method usingβ-CD as wall material.The effects of wall core ratio,stirring time and stirring temperature on inclusion rate were studied.The optimum technological parameters for the preparation of thymolβ-CD inclusion complex were explored.Then,the inclusion complex was characterized by XRD and Fourier Infrared Spectroscopy.The water solubility and high temperature stability of the inclusion complex were further analyzed.The results showed that the best preparation parameters of the thymol-β-CD inclusion complex:The wall-to-core ratio(molar ratio)was 1.25∶1,the stirring time was 2.6 h,the stirring temperature was 50℃,and the inclusion rate was 84.51%.Compared with pure thymol,the inclusion complex of thymolβ-CD showed stronger high temperature stability and water solubility.
