摘要
目的:探讨玉米肽、大米肽、小麦肽、大豆肽和核桃肽5种食源性肽的体外抗氧化活性。方法:采用氧自由基吸收能力(ORAC)法,以水溶性VE(Trolox)为定量标准,对5种食源性肽进行抗氧化活性检测。结果:玉米肽、大米肽、小麦肽、大豆肽和核桃肽的ORAC当量分别为6.004、5.405、4.469、3.253和7.527μmol Trolox/mg。结论:五种活性肽均有较好的抗氧化能力(3.2~7.5μmol Trolox/mg),其中核桃肽活性最强,其次是玉米肽、大米肽、小麦肽和大豆肽。
Objective:To investigate antioxidant activities of five food-derived peptides,including corn peptide,rice peptide,wheat peptide,soybean peptide and walnut peptide.Methods:Oxygen radical absorbance capacity(ORAC)method was adopted,and the water-soluble VE(Trolox)was applied as the quantitative standard.Results:The ORAC equivalents of corn peptide,rice peptide,wheat peptide,soybean peptide and walnut peptide were 6.004,5.405,4.469,3.253 and 7.527μmol Trolox/mg,respectively.Conclusion:The five peptides have good antioxidant capacity(3.2~7.5μmol Trolox/mg).Among them,walnut peptide has the strongest activity,followed by corn peptide,rice peptide,wheat peptide and soybean peptide.
