蛋氨酸硒对徐淮山羊生长性能、肉品质及硒沉积的影响 被引量:5

Effect of methionine-selenium on growth performance,meat quality and selenium deposition of Xuhuai goats

摘要 试验研究添加不同水平蛋氨酸硒对徐淮山羊生长性能、肉品质及硒沉积的影响。随机选取90只3月龄、健康徐淮山羊,分为6组,每组3个重复,每个重复5只。对照组组山羊饲喂基础日粮,试验组分别在基础日粮中添加0.1、0.2、0.3、0.4、0.5 mg/kg(以硒计算)蛋氨酸硒。预试期15 d,正式试验期60 d。结果显示,0.3 mg/kg组徐淮山羊的平均日增重最高,显著高于对照组、0.1 mg/kg组、0.4 mg/kg组、0.5 mg/kg组(P<0.05);0.3 mg/kg组徐淮山羊的料重比最低,显著低于0.4 mg/kg组、0.5 mg/kg组(P<0.05)。0.4 mg/kg组、0.5 mg/kg组徐淮山羊肌肉的红度(a^(*))值显著高于其他组(P<0.05);0.3 mg/kg组徐淮山羊肌肉的剪切力最小,显著低于对照组、0.4 mg/kg组、0.5 mg/kg组(P<0.05);当硒含量为0.3 mg/kg时,失水率最低,与其他组差异不显著(P>0.05)。除0.1 mg/kg组外,试验组徐淮山羊肌肉、心脏、肺、肝脏、胰脏、肾脏的硒沉积量均显著高于对照组(P<0.05),且各组织脏器中硒沉积量与日粮中硒含量呈正比,其中肾脏硒沉积量最高,其次是胰脏、肝脏、肺、心脏,肌肉硒沉积量最低;当硒含量为0.3 mg/kg时,肌肉、心、肺、肝、胰、肾中硒沉积量均已达到《富硒食品与其相关产品硒含量标准》标准。结果表明,在徐淮山羊日粮中添加蛋氨酸硒可以改善肉羊的生长性能和肉品质,增加肌肉和器官中的硒沉积,综合效果以0.3 mg/kg添加量最好。 The experiment was to investigate the effect of different levels of selenomethionine on growth performance,meat quality and selenium deposition of Xuhuai goats.Ninety 3-month-old healthy Xuhuai goats were selected and randomly divided into six groups,with three replicates in each group and five goats in each replicate.The goats in control group were fed with basal diet,and the test groups added 0.1,0.2,0.3,0.4 and 0.5 mg/kg(calculated as selenium)selenium methionine to the basal diet,respectively.The pre-feeding period lasted for 15 d,and the experimental period lasted for60 d.The results showed that the average daily weight gain of Xuhuai goats in group 0.3 mg/kg was the highest,which was significantly higher than that of control group,group 0.1 mg/kg,group 0.4 mg/kg and group 0.5 mg/kg(P<0.05).The feed to gain ratio of Xuhuai goats in group 0.3 mg/kg was the lowest,which was significantly lower than that of group0.4 mg/kg and group 0.5 mg/kg(P<0.05).Redness(a^(*))values of Xuhuai goats in group 0.4 mg/kg and group 0.5 mg/kg were significantly higher than that of other groups(P<0.05).The shear force of Xuhuai goats in group 0.3 mg/kg was the smallest,and significantly lower than that of control group,group 0.4 mg/kg and group 0.5 mg/kg(P<0.05).Water loss was the lowest when the diet was supplemented with 0.3 mg/kg of selenomethionine,and the difference was not significant compared with other groups(P>0.05).Except for group 0.1 mg/kg,the amount of selenium deposition in muscle,heart,lung,liver,pancreas and kidney of Xuhuai goats in experimental group was significantly higher than that in control group(P<0.05),and the amount of selenium deposition in various tissues and organs was similar to that in control group(P<0.05).The selenium content in the diet was proportional.The kidney had the highest selenium deposit,followed by the pancreas,liver,lung,and heart and the muscle has the lowest selenium deposit.When the selenium content was 0.3 mg/kg,the selenium deposition in muscle,heart,lung,liver,pancreas and kidney had reached the standard in’Standard for Selenium Content of Selenium Enriched Foods and Their Related Products’.The experiment indicates that the addition of selenomethionine to the rations of Xuhuai goats improve the growth performance and meat quality of meat sheep,and increase the selenium deposition in muscles and organs.The comprehensive effect is the best with the addition of 0.3 mg/kg.
