Amaranthus is an ancient annual herbaceous plant with multiple uses.It has the advantages of rich nutrition,good palatability,high yield,drought tolerance,barren tolerance and strong stress resistance.Moreover,it is rich in protein,lysine,methionine,fat and phenolic compounds.It has great feed values in growth promotion,anti-oxidation and health improvement,and has huge development potential and broad application prospects.This article summarized the nutritional value,secondary metabolites,preparation and processing methods of plant leaves and grains of Amaranthus,and its application in animal production,in order to provide scientific basis and production technology guidance for the rational development of high-quality Amaranthus feed resources.
