摘要
基于膳食纤维的主要生理功能,介绍膳食纤维的主要来源及其特点,列举不同种类膳食纤维在面制品、饮品和肉制品中的应用情况,为膳食纤维的进一步开发利用提供参考。
Based on the main physiological function of dietary fiber,this paper introduced the main sources and characteristics of dietary fiber,and listed the application of different kinds of dietary fiber in flour products,drinks and meat products,so as to provide a reference for the further development and utilization of dietary fiber.
