基于文献计量的果蔬贮藏加工与质量安全研究态势分析 被引量:2

摘要 以Web of Science中果蔬贮藏加工与质量安全领域的文献数据为基础,采用文献计量法从逐年发文数量、高发文机构、来源国家/地区、高发文出版物、高被引论文、研究前沿与热点等方面对该领域发展态势进行分析,结果表明:近10 a来学界对果蔬贮藏加工与质量安全研究领域保持着较高的关注度,发文数量呈现稳步上升的趋势,10 a间文献数量增加了102.69%,发展态势良好;其中,抗氧化研究和果蔬加工技术研究是热点,而抗氧化研究主要集中在多酚类物质、类黄酮、白藜芦醇等方面;同时,果蔬副产物提取与营养功能研究也具有良好的发展前景。 Based on the literature data in the field of storage,processing and quality safety of fruits and vegetables in Web of Science,the development trend of this field was analyzed by bibliometric method from the aspects of annual number of papers,high-publishing institutions,source countries/regions,high-publishing publications,high-cited papers,research frontiers and hotspots.The results showed that the academic circle had maintained high attention in the field of storage,processing and quality safety of fruits and vegetables in the past 10 years,and the number of papers showed a steady upward trend.The number of documents increased by 102.69%in the past 10 years,and the development trend was good;among them,antioxidant research and fruit and vegetable processing technology research are hot spots,and antioxidant research mainly focuses on polyphenols,flavonoids,resveratrol and so on;at the same time,the research on the extraction of fruit and vegetable by-products and nutritional function also has a good development prospect.
