柚子全身是宝,尤其柚子皮富含营养物质,利用价值较高,具有很多的天然活性成分,在食品加工中可用来加工成各种美食。本文对柚子皮活性成分在食品加工中的综合利用研究进展进行了综述,变废为宝,提高利用价值。

Grapefruit is a treasure all over the body,especially grapefruit peel.It is rich in nutrients and has high utilization value.It has a lot of natural active ingredients.It can be used to process into various delicious foods in food processing.This paper reviews the research progress of comprehensive utilization of active components of grapefruit peel in food processing,so as to turn waste into treasure and improve its utilization value.
