摘要
以苏州17种稻米的整精米率、垩白度、胶稠度、直链淀粉含量等数据为基础,从稻米的加工、外观、食味和营养4个方面对苏州稻米检测数据进行分析。结果显示,苏州稻米加工、外观和食味品质良好,各品种间部分指标检测结果变异性较大,影响稻米品质达标的关键指标为直链淀粉含量。
Based on the data of the whole rice rate,chalkiness,gel consistency,and amylose content of 17 kinds of rice in Suzhou,the testing data of Suzhou rice was analyzed from four aspects of rice processing,appearance,taste and nutrition.The results showed that the processing,appearance and taste of Suzhou rice were of good quality,and there was great variability in the detection results of some indicators among various varieties.The key indicator that affected the quality of rice was amylose content.
