摘要
本试验通过碱法提取干燥橘皮中含有的可溶性膳食纤维(SDF),研究碱液浓度、浸提时间、浸提温度、料液比对SDF提取率的影响,选择出碱法提取橘皮SDF最佳条件。在该试验范围内,提取橘皮可溶性纤维最适宜条件为料液比1:30(g/mL)、浸提时间5 h、浸提温度70℃、碱液浓度35 mg/mL,在最适条件下平均提取率为9.23%。提取出来后,再对其持水力、溶胀性、脂肪结合能力、还原力等理化性质进行测定。结果表明:橘皮SDF的持水力为1.21 g/g,脂肪结合量在30 min时测得吸附量为4.42 g/g,1 h时测得吸附量为4.39 g/g。表明0~30 min吸附量增加较大,在30~60 min几乎未增加,30 min后已达到吸附平衡;溶胀性为2.32 mL/g,还原力测定中橘皮可溶性膳食纤维具备一定的还原能力,但还原能力不如维生素C(Vc),为Vc的53.06%。
Soluble dietary fiber(SDF)in dried orange peel was extracted by alkali method.The effects of alkali concentration,extraction time,extraction temperature and solid-liquid ratio on SDF extraction rate were studied,and the optimum conditions were selected.The results showed that the optimum conditions for extracting soluble fiber from orange peel were solid-liquid ratio of 1:30(g/mL),extraction time of 5 h,extraction temperature of 70℃and alkali concentration of 35 mg/mL.Under the optimum conditions,the average extraction rate was 9.23%.After extraction,its water holding capacity,swelling capacity,fat binding capacity and reducing power were determined.The results showed that the water holding capacity of SDF was 1.21 g/g,the adsorption capacity of SDF was 4.42 g/g at 30 min and 4.39 g/g at 1 h.It could be seen that the adsorption capacity increased greatly in 0~30 min,almost did not increase in 30~60 min,and reached the adsorption equilibrium after 30 min;the swelling capacity was 2.32 mL/g,and the reducing capacity of soluble dietary fiber in orange peel was 53.06%of vitamin C(Vc),which was lower than Vc.
