摘要
以鲔鱼鱼皮为主要原料,考察不同的前处理方式制备的鱼皮蛋白肽在总氮、羟脯氨酸、总硒、灰分等理化指标及甲基汞、无机砷、铅、镉等污染物指标上的差异。结果表明:原料不经采肉处理,直接用稀碱水处理和流动水清洗结合的方法既可以有效去除鱼皮表面的油脂和杂蛋白,还能够保证各项指标满足国标要求,同时还能够达到胶原蛋白多肽富硒化的目的。
Tuna skin were used as main raw materials to test the differences of several pre-treaments on physicochemical indexes such as total nitrogen,hydroxyproline,total selenium,ash and pollutants such as methyl mercury,inorganic arsenic,lead and cadmium.The results show that raw materials processing without separating of flesh can not only effectively remove the grease and miscellaneous proteins on the surface of fish skin,but also ensure that indexes meet the requirements of national standard,and achieve the purpose of accumulating of selenium for collagen peptide from fish skin.
