摘要
大蒜是百合科葱属植物大蒜的鳞茎,作为食物和药物历史悠久,有机硫化物是大蒜主要的生物活性成分。大蒜中含有的机硫化物多为硫醚,多数具有双键,且部分具有酸碱两性。大蒜有机硫化物具有抗氧化、降血压、降血脂、抗肿瘤等生物活性。本文总结了大蒜中有机硫化物的结构和生物活性,以期为大蒜保健功能的开发和大蒜中有机硫化物的深入研究提供参考借鉴。
Allii sativi bulbus is the bulb of Allium sativum L., which belongs to Allium, Liliaceae. It has a long history of being used as food and medicine. Organic sulfides are the main bioactive component of Allii sativi bulbus. The organic sulfides in Allii sativi bulbus are mainly thioethers, most have double bonds, and some of them are acid-base amphoteric. The organic sulfides in Allii sativi bulbus have antioxidant, antihypertensive, hypolipidemic, antitumor and other biological activities. This paper summarizes the structure and biological activity of organic sulfides in Allii sativi bulbus, in order to provide reference for the development of health function and the in-depth study of organic sulfides.
