摘要
以富硒绿茶、富硒绿豆为主要原料,辅以糊精、白砂糖、薄荷、胖大海等辅料,经过超微粉碎、混合、制粒、干燥、压片、包衣等工序,利用正交试验优化制备富硒茶含片的最佳配方和工艺,并对其质量进行评价。结果表明,当以麦芽糊精作为填充剂,95%乙醇作为湿润剂,富硒超微茶粉添加量10%,麦芽糊精添加量20%,糖粉添加量10%,压片前水分含量1%时,制成的富硒茶含片色香味俱佳、防潮性好,茶多酚高达1.9%,硒含量为0.20 mg/kg,满足国家标准规定的“富硒食品”声称要求。
Using selenium-rich green tea and mung bean as the main raw materials,supplemented with dextrin,sugar,mint,fat sea and other auxiliary materials,through the processes of ultra-fine crushing,mixing,granulation,drying,tablet pressing,coating and so on,the best formula and technology for preparing selenium-rich tea buccal tablets were screened by orthogonal test,and its quality was evaluated.The results showed that when maltodextrin was used as filler,95%ethanol as wetting agent,selenium-enriched ultra-fine tea powder 10%,maltodextrin 20%,sugar powder 10%,and moisture content 1%before tablet pressing,the selenium-rich tea was made with good color,flavor,moisture-proof,tea polyphenols as high as 1.9%and selenium content of 0.20 mg/kg,to meet the claimed requirements of“selenium-rich food”in the national standard.
